1. Red Amaranth Microgreens Salad

Ingredients:
- 1 cup red amaranth microgreens
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced almonds
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper, to taste
Instructions:
