1. Kohlrabi Microgreen Slaw:

Ingredients:
- 1 medium kohlrabi, peeled and shredded
- 1/4 cup chopped kohlrabi microgreens
- 1/4 cup chopped fresh parsley
- 1/4 cup Greek yogurt
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the shredded kohlrabi, chopped kohlrabi microgreens, and fresh parsley.
- In a small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, salt, and pepper.
